Midterm season is killing us all. You have three midterms in one day and you will probably spend the weekend locked up 24/7 in the library. There’s barely any time for eating, let alone cooking. So here you will find the perfect breakfast dish tailored for college students on a low budget and low on time.

Start your day off right with these breakfast tortillas, Guatemalan style. These delicious burrito-type tortillas will give you the perfect jump start for a full day spent at the library. At least you can say you enjoyed one thing during the day!

This is what you’ll need (everything can be found at your nearest Fresh & Easy):

  • 2 eggs
  • 2 slices of ham
  • 1 flour tortilla
  • 1 avocado
  • Red pepper flakes
  • Mozarella cheese
  • Oregano

It’s pretty easy. Place your tortilla on the toaster for 3 minutes to make it crunchy. Then, spread it out on your plate and place the slices of ham on it.

Cook the eggs to your preferred style and also add them to the tortilla. To spice things up, sprinkle the mozzarella cheese and the red pepper flakes over the eggs.

Finally, slice up the avocado and put the pieces on top of the tortilla. Bend the tortilla and its ready to eat!

For a quick, delicious drink to go with it, try this blueberry and banana smoothie.

Add a cup of frozen blueberries and one banana to the blender, along with a cup of Greek yogurt. If you’ve got a sweet tooth, some sugar or vanilla extract might be a good idea. Blend on high speed until smooth, and enjoy.
