Start your day right: Six breakfast ideas for students
1. Vanilla scones and chocolate
Grab and go! Make this over the weekend so you have some treats for the week.
Ingredients:
- 2 cups of all-purpose flour
- ½ cup of sugar
- 1 ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 1 bar of unsalted butter (cold and cut in pieces)
- ½ cup milk
- 2 teaspoon vanilla extract
- 1 egg
- Egg wash
- Raw sugar (or any type of sugar you have)
Process
- Line a baking sheet with parchment paper.
- In a medium bowl, mix together the dry ingredients.
- In a small bowl mix together the milk, vanilla extract and the egg.
- Add the butter cubes to the dry mixture.
- Add the milk mixture to the butter mixture and combine until the dough comes together.
- Place the dough on a floured surface. Shape into a circle, a little less than an inch thick, cut triangular pieces and put it on the prepared baking sheet.
- Brush egg wash on top and sprinkle raw sugar.
- Bake at 400°F for about 18 minutes or until golden brown.
2. Taco Tuesday
Ingredients:
- 1-2 eggs (scrambled)
- Refried beans (heated up)
- 2 corn tortillas
- Shredded cheese
- 1 avocado
Process:
- Bake taco shells for four minutes at 350°F, or microwave for 45 seconds.
- While shells are baking, heat up refried beans.
- Scramble eggs in pan.
- Pile eggs, refried beans and shredded cheese in shell.
- Scoop the avocado out and place it on top!
3. Breakfast smoothie: Drink your fruit
Option 1: Strawberry-Banana
Ingredients
- 1 banana
- ½ cup strawberries
- 1 cup 2% milk
- 1/3 cup plain yogurt
- 2 teaspoon honey (if you really like it sweet)
Option 2: Dr. Oz detox cleanse breakfast drink
Ingredients:
- 1 cup water
- 1 tablespoon flax seed
- 1 cup raspberries
- 1 banana
- ¼ cup spinach
- 1 tablespoon almond butter
- 2 teaspoon lemon
Mix all ingredients together in a blender, and voila!
4. Overnight oats
Ingredients:
- 1 mashed banana
- ½ cup of rolled oats
- ½ cup plain greek yogurt
- ¼ cup of honey
- 1/8 cup of peanut butter
- Blackberries
- ½ cup milk (almond, coconut or 2%)
Process
- Put all the ingredients on the list (follow the order) on a lid container (I used those vintage jars because they look so cute!). Shake it until all ingredients are well combined.
- Let it sit on your fridge overnight.
- Wake up the next morning, and breakfast’s ready!
5. Pancakes: Sugar up
Ingredients:
- Pancake mix of your choice
- Milk or water
- Fruits
- Honey or maple syrup
6. Biscuit-covered eggs

Ingredients:
- ½ onion (chopped)
- 1/3 cup Canadian bacon – or sausage (chopped)
- 3-4 eggs
- ¼ cup of cheddar cheese
- ¼ cup mozzarella cheese
- ¼ teaspoon pepper
- ¼ teaspoon salt
- 1 tube buttermilk biscuits
- A pinch of chives
Process
- Add all ingredients on a bowl and whisk.
- Grease a baking dish or spray it with cooking spray or coconut oil.
- Open the buttermilk biscuits and place them on the baking dish.
- Pour the egg mixture over biscuits.
- Top with chives.
- Bake on a 350°F for 30-35 minutes.
- Let it cool for about 10 minutes.
- Cut a piece and enjoy!
